Ingredients

5–6 large potatoes
2 medium onions
3 large eggs
3 tablespoons olive oil or schmaltz
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder (optional)
1/2 teaspoon paprika (optional)
Instructions
- Peel and thinly slice the potatoes.
- Dice onions and sauté in olive oil until golden.
- Whisk eggs with salt, pepper, and optional spices.
- Layer half the potatoes in a greased baking dish, add sautéed onions, and top with the remaining potatoes.
- Pour the egg mixture over the layers.
- Cover with foil and bake at 375°F (190°C) for 30 minutes.
- Remove foil, drizzle with olive oil, and bake for another 20-25 minutes until golden.
Notes
- For extra crispiness, broil for 2-3 minutes at the end.
- Substitute sweet potatoes for a sweeter variation.
- Make it vegan by replacing eggs with flaxseed water mixture.
