Description

A savory and crispy Passover Potato Pie that’s kosher-for-Passover, perfect for your Seder table. Easy to make and packed with flavor!


Ingredients

56 large potatoes

2 medium onions

3 large eggs

3 tablespoons olive oil or schmaltz

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder (optional)

1/2 teaspoon paprika (optional)


Instructions

  • Peel and thinly slice the potatoes.
  • Dice onions and sauté in olive oil until golden.
  • Whisk eggs with salt, pepper, and optional spices.
  • Layer half the potatoes in a greased baking dish, add sautéed onions, and top with the remaining potatoes.
  • Pour the egg mixture over the layers.
  • Cover with foil and bake at 375°F (190°C) for 30 minutes.
  • Remove foil, drizzle with olive oil, and bake for another 20-25 minutes until golden.

Notes

  • For extra crispiness, broil for 2-3 minutes at the end.
  • Substitute sweet potatoes for a sweeter variation.
