Warm, gooey, and topped with crunchy pecans, this pecan pie cobbler is the ultimate Southern dessert that’s easy to make and perfect for any occasion.

Ingredients

Scale
  • 1/2 cup unsalted butter, melted 🧈
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt 🧂
  • 3/4 cup milk 🥛
  • 1 cup dark corn syrup
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups pecan halves

Instructions

  • Preheat your oven to 350°F (175°C).
  • Pour the melted butter into a 9×13-inch baking dish and set aside.
  • In a mixing bowl, combine flour, granulated sugar, baking powder, and salt. Whisk to mix.
  • Gradually add milk while whisking to create a smooth batter. Pour the batter evenly over the melted butter in the baking dish. Do not stir.
  • Sprinkle the pecan halves evenly over the batter.
  • In a saucepan, combine dark corn syrup, brown sugar, and vanilla extract. Heat over medium heat until smooth, then drizzle the syrup mixture evenly over the pecans.
  • Bake in the preheated oven for 35-40 minutes, or until the edges are golden brown and the center is set.
  • Let the cobbler cool for 10-15 minutes before serving.

Notes

  • For extra crunch, broil the cobbler for 2-3 minutes after baking.
  • Add a scoop of vanilla ice cream or a dollop of whipped cream for the perfect finishing touch.
  • To make it gluten-free, substitute the all-purpose flour with a 1:1 gluten-free flour blend.
