Instructions
Prep all ingredients: spiralize zucchini, mince garlic, halve tomatoes.
Heat olive oil in a skillet over medium heat; add shrimp, cooking 3-4 minutes until pink. Remove and set aside.
In the same skillet, sauté garlic until fragrant, then add tomatoes, cooking until blistered.
Pour in heavy cream; simmer. Add Parmesan, stirring until sauce thickens.
Return shrimp and add zoodles; toss to coat in sauce. Cook 2-3 minutes until zoodles are tender.
Notes
Store any leftovers in the refrigerator and consume within 2 days.
