Ingredients
  

Main Ingredients

  • 1 lb shrimp peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese grated
  • 3 medium zucchini spiralized
  • 1 tsp Italian seasoning

Instructions
 

  • Prep all ingredients: spiralize zucchini, mince garlic, halve tomatoes.
  • Heat olive oil in a skillet over medium heat; add shrimp, cooking 3-4 minutes until pink. Remove and set aside.
  • In the same skillet, sauté garlic until fragrant, then add tomatoes, cooking until blistered.
  • Pour in heavy cream; simmer. Add Parmesan, stirring until sauce thickens.
  • Return shrimp and add zoodles; toss to coat in sauce. Cook 2-3 minutes until zoodles are tender.

Notes

Store any leftovers in the refrigerator and consume within 2 days.
