  • green bell pepper
  • diced tomatoes
  • beef broth
  • tomato paste
  • ground cumin
  • chili powder
  • paprika
  • cayenne pepper
  • salt and black pepper
  • flour
  • cilantro

Steps

  • Prepare the beef by trimming excess fat and cutting it into 1-inch cubes. Season with salt and pepper.
  • In a large Dutch oven, heat oil over medium-high heat and brown the beef in batches.
  • Sauté chopped onion, garlic, and bell pepper in the same pot until they soften.
  • Add diced tomatoes, tomato paste, spices, and combine with vegetables. Toast lightly.
  • Return beef to the pot with any juices. Add broth and stir. Simmer on low for 2-2.5 hours.
  • For a thicker stew, mix flour with water and stir in during the last 20 minutes. Simmer uncovered.

Notes

To store, allow to cool and refrigerate in airtight containers for up to 4 days, or freeze for 3 months.
