Steps
Prepare the beef by trimming excess fat and cutting it into 1-inch cubes. Season with salt and pepper.
In a large Dutch oven, heat oil over medium-high heat and brown the beef in batches.
Sauté chopped onion, garlic, and bell pepper in the same pot until they soften.
Add diced tomatoes, tomato paste, spices, and combine with vegetables. Toast lightly.
Return beef to the pot with any juices. Add broth and stir. Simmer on low for 2-2.5 hours.
For a thicker stew, mix flour with water and stir in during the last 20 minutes. Simmer uncovered.
Notes
To store, allow to cool and refrigerate in airtight containers for up to 4 days, or freeze for 3 months.
