Instructions
Preheat your oven to 375°F (190°C) and prepare the zucchinis by slicing them in half and scooping out the flesh.
Heat olive oil in a pan over medium-high heat, add onions and garlic to sauté. Add beef and tomatoes, cooking with chili powder.
Stuff the zucchini halves with the beef mixture, pressing firmly.
Bake in the oven for 20-25 minutes until zucchini is tender.
Mash avocados, season them, and top each zucchini boat post baking.
Notes
