  • 4 medium zucchinis
  • 1 pound ground beef
  • 2 ripe avocados
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup tomatoes diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • salt and pepper to taste
  • fresh cilantro for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C) and prepare the zucchinis by slicing them in half and scooping out the flesh.
  • Heat olive oil in a pan over medium-high heat, add onions and garlic to sauté. Add beef and tomatoes, cooking with chili powder.
  • Stuff the zucchini halves with the beef mixture, pressing firmly.
  • Bake in the oven for 20-25 minutes until zucchini is tender.
  • Mash avocados, season them, and top each zucchini boat post baking.

Notes

For freshness, add the avocado topping just before serving. Store leftovers in an airtight container for up to 3 days, enjoying them hot or cold.
