Instructions
Preheat your oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat; add ground beef and cook until browned.
Add chopped onion and minced garlic to the skillet; sauté until onion is translucent.
Stir in sliced zucchinis and diced tomatoes, season with salt, pepper, and Italian seasoning; simmer for 5 minutes.
Layer half the beef mixture in a baking dish, sprinkle with half the cheese, repeat layers.
Bake for 25-30 minutes until the cheese is melted and golden.
Notes
To reheat, preheat your oven to 350°F (175°C) and cover the casserole with foil to keep it from drying out.
