  • 1 lb ground beef
  • 2 medium zucchinis sliced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat; add ground beef and cook until browned.
  • Add chopped onion and minced garlic to the skillet; sauté until onion is translucent.
  • Stir in sliced zucchinis and diced tomatoes, season with salt, pepper, and Italian seasoning; simmer for 5 minutes.
  • Layer half the beef mixture in a baking dish, sprinkle with half the cheese, repeat layers.
  • Bake for 25-30 minutes until the cheese is melted and golden.

Notes

To reheat, preheat your oven to 350°F (175°C) and cover the casserole with foil to keep it from drying out.
