- - 2 ripe bananas mashed
- - 2 cups milk dairy or plant-based
- - 1/4 cup maple syrup or honey
- - 1 large egg lightly beaten
- - 1 tsp vanilla extract
- - 1/2 tsp baking powder
- - 1/2 tsp baking soda
- - 1/2 tsp salt
- - 1 tsp ground cinnamon
- - Optional: 1/2 cup chopped walnuts or pecans
- - Optional: 1/2 cup raisins or dried cranberries
Preheat your oven to 375°F (190°C) and lightly grease an 8x8 inch baking dish.
In a large mixing bowl, combine the mashed bananas, milk, maple syrup, beaten egg, and vanilla extract. Mix well until the mixture is smooth and uniform.
In a separate bowl, whisk together the rolled oats, baking powder, baking soda, salt, and ground cinnamon. If using, stir in the optional chopped walnuts and/or raisins.
Gently fold the dry ingredients into the wet ingredients, mixing just until combined. Avoid overmixing to keep the texture light and airy.
Pour the combined mixture into the prepared baking dish, spreading it evenly.
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Remove the dish from the oven and let it cool for about 10 minutes before serving. Enjoy warm or at room temperature.
- For extra crunch, lightly toast the walnuts before mixing them in.
- Adjust the sweetness to taste by adding more or less maple syrup.
