Ingredients
  

  • - 2 cups rolled oats
  • - 2 ripe bananas mashed
  • - 2 cups milk dairy or plant-based
  • - 1/4 cup maple syrup or honey
  • - 1 large egg lightly beaten
  • - 1 tsp vanilla extract
  • - 1/2 tsp baking powder
  • - 1/2 tsp baking soda
  • - 1/2 tsp salt
  • - 1 tsp ground cinnamon
  • - Optional: 1/2 cup chopped walnuts or pecans
  • - Optional: 1/2 cup raisins or dried cranberries

Instructions
 

  • Preheat your oven to 375°F (190°C) and lightly grease an 8x8 inch baking dish.
  • In a large mixing bowl, combine the mashed bananas, milk, maple syrup, beaten egg, and vanilla extract. Mix well until the mixture is smooth and uniform.
  • In a separate bowl, whisk together the rolled oats, baking powder, baking soda, salt, and ground cinnamon. If using, stir in the optional chopped walnuts and/or raisins.
  • Gently fold the dry ingredients into the wet ingredients, mixing just until combined. Avoid overmixing to keep the texture light and airy.
  • Pour the combined mixture into the prepared baking dish, spreading it evenly.
  • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Remove the dish from the oven and let it cool for about 10 minutes before serving. Enjoy warm or at room temperature.

- For extra crunch, lightly toast the walnuts before mixing them in.
- Adjust the sweetness to taste by adding more or less maple syrup.
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave for a quick breakfast.
