  • beef chuck roast
  • dried guajillo chiles
  • beef broth
  • garlic
  • apple cider vinegar
  • cumin
  • dried oregano
  • ramen noodles
  • Salt and pepper
  • Fresh cilantro and lime wedges

Steps

  • Soak guajillo chiles in hot water, blend into paste.
  • Sear the beef chuck roast on all sides in a Dutch oven.
  • Combine garlic, chile paste, vinegar, cumin, oregano, and broth. Simmer.
  • Return beef to pot. Braise for 3 hours over low heat.
  • Prepare ramen noodles per package instructions.
  • Assemble: place noodles in bowl, top with beef and broth, garnish with cilantro and lime.

Notes

Store leftovers in the fridge for up to three days, reheat gently with added broth as needed.
