Steps

  • Cut beef into 2-inch cubes; pat dry to ensure a good sear.
  • Render the bacon until crispy in a Dutch oven.
  • Brown beef cubes in batches in the rendered bacon fat.
  • Sauté onions and garlic in the pot until translucent.
  • Add carrots and mushrooms; cook until slightly softened.
  • Return beef and bacon to the pot. Sprinkle with flour.
  • Add wine, broth, and tomato paste. Stir and combine.
  • Add thyme, bay leaves, salt, and pepper. Simmer for 2.5 to 3 hours.

Notes
