Instructions
Steps
Cut beef into 2-inch cubes; pat dry to ensure a good sear.
Render the bacon until crispy in a Dutch oven.
Brown beef cubes in batches in the rendered bacon fat.
Sauté onions and garlic in the pot until translucent.
Add carrots and mushrooms; cook until slightly softened.
Return beef and bacon to the pot. Sprinkle with flour.
Add wine, broth, and tomato paste. Stir and combine.
Add thyme, bay leaves, salt, and pepper. Simmer for 2.5 to 3 hours.
