Steps

  • Heat a tablespoon of olive oil in a large skillet over medium heat. Add the sliced chicken breast, seasoning it with salt and pepper. Cook the chicken for 5–7 minutes or until no longer pink in the center. Add half a cup of buffalo sauce to the chicken, stirring to coat well. Let it simmer for another 2–3 minutes.
  • While the chicken is cooking, prepare the bowls by adding a serving of cooked rice to each. The rice acts as a base and absorbs the sauce flavors.
  • Add sliced avocado, shredded cheddar cheese, halved cherry tomatoes, and sliced red onions to the bowls along with the chicken.
  • Drizzle ranch dressing over the top and garnish with cilantro.

Notes

To retain freshness, store components separately and combine just before eating. Freeze chicken and rice for longer storage.
