Steps

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat. Add the onions and bell peppers, stirring until the beef is browned.
  • Drain any excess fat from the skillet.
  • Add the beans, corn, Rotel, and taco seasoning to the skillet. Mix well and let it simmer for 5 minutes.
  • Transfer the mixture to a baking dish. Top with shredded cheese.
  • Bake for 25-30 minutes until the cheese is bubbly.
  • Remove from oven, let it cool slightly, and serve topped with sour cream.
