Steps
Preheat your oven to 375°F (190°C).
In a large skillet, cook the ground beef over medium heat. Add the onions and bell peppers, stirring until the beef is browned.
Drain any excess fat from the skillet.
Add the beans, corn, Rotel, and taco seasoning to the skillet. Mix well and let it simmer for 5 minutes.
Transfer the mixture to a baking dish. Top with shredded cheese.
Bake for 25-30 minutes until the cheese is bubbly.
Remove from oven, let it cool slightly, and serve topped with sour cream.
