  • cheddar cheese
  • large flour tortillas

Steps

  • Peel and dice the potatoes. Boil them in salted water for 10-12 minutes until tender but not mushy. Drain and set aside.
  • Sauté onions in olive oil over medium heat until translucent, then add garlic and sauté for another minute.
  • Add cooked potatoes to the skillet, season with paprika, salt, and pepper, and toss to coat evenly. Cook for 5 minutes.
  • Sprinkle cheese over the potato mixture, reduce heat to low, and let the cheese melt. Stir gently to combine.
  • Warm tortillas and fill each with the cheese and potato mix. Roll up and serve with extra garnishes if desired.

Notes

Store leftovers in the refrigerator wrapped in foil for three days or freeze for up to three months. Reheat in the oven for best results.
