  • unsalted butter
  • granulated sugar
  • bittersweet chocolate
  • large egg yolks
  • large egg whites
  • pinch of salt
  • cream of tartar
  • granulated sugar
  • powdered sugar

Steps

  • Preheat your oven to 375°F (190°C). Grease the inside of each ramekin with butter and dust with granulated sugar.
  • In a saucepan, melt the butter over low heat and add the chopped chocolate. Stir until smooth, then set aside.
  • Beat egg yolks with 2 tablespoons of sugar until thick and pale. Stir in the melted chocolate.
  • Beat the egg whites with salt and cream of tartar until soft peaks form. Gradually add 1/4 cup sugar, beating to stiff peaks.
  • Gently fold egg whites into chocolate mixture until no streaks remain. Spoon into prepared ramekins.
  • Place ramekins on a baking sheet and bake for 12-15 minutes. Dust with powdered sugar and serve immediately.

Notes

While chocolate soufflés are best enjoyed fresh, leftovers can be stored in an airtight container and gently reheated to regain some puff.
