Steps
Season the thinly sliced beef sirloin with salt and black pepper to taste.
Heat olive oil in a large skillet over medium-high heat and brown the beef in batches, removing the beef when browned.
In the same skillet, add chopped onions and minced garlic. Sauté until onions are translucent.
Add sliced mushrooms and cook until they release moisture and begin to brown.
Sprinkle flour over the mixture, stir to coat, then gradually add beef broth while stirring to prevent lumps.
Add Worcestershire sauce and Dijon mustard, simmer for a few minutes.
Return browned beef to the pan, simmer until beef is cooked to your liking.
Remove skillet from heat and stir in sour cream until fully combined.
Serve the stroganoff over cooked egg noodles or rice, garnish with chopped parsley.
