Instructions
Melt butter in a large pot over medium heat.
Add chopped onion and garlic. Sauté for 2–3 minutes until soft.
Add sliced mushrooms, thyme, salt, and pepper. Cook for 7–8 minutes until mushrooms are tender and browned.
Pour in chicken broth and bring to a simmer. Cook for 10 minutes to blend flavors.
Stir in heavy cream and simmer for another 5 minutes. Optional: Blend part of the soup for a creamier texture.
Serve hot, optionally garnished with fresh herbs or a swirl of cream.
Notes
This soup is great for make-ahead meals. Store in the fridge for up to 4 days or freeze for longer storage.
