Ingredients
  

Main Ingredients

  • 2 tbsp butter
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 10 oz mushrooms sliced (e.g., cremini or white button)
  • 1/2 tsp dried thyme
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper
  • 3 cups chicken broth or vegetable broth
  • 3/4 cup heavy cream

Instructions
 

  • Melt butter in a large pot over medium heat.
  • Add chopped onion and garlic. Sauté for 2–3 minutes until soft.
  • Add sliced mushrooms, thyme, salt, and pepper. Cook for 7–8 minutes until mushrooms are tender and browned.
  • Pour in chicken broth and bring to a simmer. Cook for 10 minutes to blend flavors.
  • Stir in heavy cream and simmer for another 5 minutes. Optional: Blend part of the soup for a creamier texture.
  • Serve hot, optionally garnished with fresh herbs or a swirl of cream.

Notes

This soup is great for make-ahead meals. Store in the fridge for up to 4 days or freeze for longer storage.
