Pound the chicken breasts to an even thickness and season them with salt, pepper, garlic powder, and Italian seasoning.
In a skillet over medium heat, add olive oil and cook the seasoned chicken until golden brown on each side and fully cooked through. Remove from heat and set aside.
Preheat your oven to 375°F (190°C). Combine cottage cheese, half of the mozzarella, and half of the Parmesan in a bowl. Spread a layer of marinara sauce in a baking dish, place chicken on top, and cover with the cheese mixture. Pour the rest of the marinara sauce over the chicken.
Sprinkle remaining mozzarella and Parmesan cheese over the top and bake in preheated oven for 20 minutes, or until cheese is bubbly and golden. Garnish with fresh basil before serving.
Notes
The dish can be refrigerated for up to 3 days. Reheat in the oven at 350°F (175°C) until warmed through.
