Preheat your oven to 350°F (175°C) and spray a muffin tin with non-stick cooking spray.
Crack the eggs into a large bowl and whisk until they are well scrambled.
Add cottage cheese, cheddar cheese, bell peppers, spinach, salt, and pepper to the eggs and mix well.
Pour the mixture into the prepared muffin tin cups, filling each about three-quarters full.
Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and golden.
Allow to cool slightly before removing from the tin. Serve warm or cool completely for later.
Notes
For best storage, allow the egg bites to cool completely, then refrigerate in an airtight container for up to 5 days. To reheat, microwave them for about 30 seconds.
