Steps

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk the eggs, then add cottage cheese and shredded cheddar cheese. Combine thoroughly.
  • Add the diced bell peppers and chopped spinach to the egg mixture. Season with salt and pepper, and stir well.
  • Lightly grease a muffin tin and pour the mixture evenly into each cup, filling three-quarters full.
  • Bake in the preheated oven for 18-20 minutes until set and golden brown.
  • Allow to cool for a few minutes before serving hot or storing for later.

Store in an airtight container in the fridge for up to 4 days, or freeze for extended storage.
