Steps
Preheat your oven to 350°F (175°C).
In a large mixing bowl, whisk the eggs, then add cottage cheese and shredded cheddar cheese. Combine thoroughly.
Add the diced bell peppers and chopped spinach to the egg mixture. Season with salt and pepper, and stir well.
Lightly grease a muffin tin and pour the mixture evenly into each cup, filling three-quarters full.
Bake in the preheated oven for 18-20 minutes until set and golden brown.
Allow to cool for a few minutes before serving hot or storing for later.
