Steps
Preheat your oven to 375°F (190°C).
Pat chicken thighs dry with a paper towel and season with salt and pepper.
Heat olive oil in a skillet over medium heat. Sear the chicken, skin side down, for 3-4 minutes per side until golden.
In a bowl, mix heavy cream, chicken broth, dijon mustard, and garlic.
Transfer chicken to a baking dish. Pour prepared sauce over it, add thyme and Parmesan.
Bake for 30 to 35 minutes until chicken is cooked through and sauce is bubbly.
