  • Gather all your ingredients together. Proper preparation is key to a smooth cooking process. Chop your bell pepper and onion, mince the garlic, and cut your chicken breast into thin strips.
  • Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken strips and season with Cajun seasoning, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove from the skillet and set aside.
  • In the same skillet, add a little more oil if needed, then add the diced bell pepper, chopped onion, and minced garlic. Sauté until vegetables are tender and the onions turn translucent, about 5 minutes.
  • Add rice to the skillet with the vegetables, stir to coat the rice with the oil and juices, and cook for 2 minutes. Then pour in the chicken broth and heavy cream. Stir well and bring to a simmer.
  • Return the chicken to the skillet, reduce heat to low, cover, and simmer for approximately 20-25 minutes or until the rice is cooked and most of the liquid is absorbed.
  • If desired, sprinkle shredded cheese over the top, replace the lid, and allow the cheese to melt before serving. Stir well, adjust seasoning, and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of cream or milk to regain its creamy consistency.
