Steps
Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain and set aside.
Heat olive oil in the pot over medium heat. Add minced garlic and sauté for 2 minutes.
Stir in Rotel tomatoes, add heavy cream, then cheeses, and stir until cheese melts.
Return pasta to pot; toss gently with sauce, season with salt and pepper.
Serve warm, garnished with fresh basil.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of cream to refresh the sauce.
