Steps
Place the chicken breasts between two pieces of plastic wrap and pound with a meat mallet to even thickness. Season with salt and pepper.
In a mixing bowl, combine flour, baking powder, paprika, and garlic powder.
In another bowl, whisk together buttermilk and eggs.
Dip each seasoned chicken breast into flour mixture, then in buttermilk mixture, and again in flour mixture for a double coating.
Heat oil in a deep fryer or skillet to 350°F (175°C).
Carefully place the chicken into the oil, frying until golden brown and cooked through, about 5-7 minutes per side.
Notes
Store in an airtight container in refrigerator for up to 3 days. Reheat in oven for best texture.
