  • baking powder
  • paprika
  • garlic powder
  • buttermilk
  • eggs

Steps

  • Place the chicken breasts between two pieces of plastic wrap and pound with a meat mallet to even thickness. Season with salt and pepper.
  • In a mixing bowl, combine flour, baking powder, paprika, and garlic powder.
  • In another bowl, whisk together buttermilk and eggs.
  • Dip each seasoned chicken breast into flour mixture, then in buttermilk mixture, and again in flour mixture for a double coating.
  • Heat oil in a deep fryer or skillet to 350°F (175°C).
  • Carefully place the chicken into the oil, frying until golden brown and cooked through, about 5-7 minutes per side.

Notes

Store in an airtight container in refrigerator for up to 3 days. Reheat in oven for best texture.
