  • Cut your chicken thighs into small, bite-sized pieces. Pat them dry with paper towels to remove any excess moisture, which will help them crisp up nicely in the oven. Season with salt and pepper for flavor that penetrates deeply as they bake.
  • In three separate bowls, place flour, beaten eggs, and Panko breadcrumbs. To each bowl, ensure that there is enough space for several pieces of chicken at a time. Dredge each chicken piece in flour, dip in egg, and then coat with Panko breadcrumbs for a perfect, crispy exterior.
  • Preheat your oven to 400°F (200°C). Place a wire rack on top of a baking sheet to ensure the chicken pieces remain crispy all around. Lay the breaded chicken in a single layer on the rack. Bake for 25-30 minutes, or until the chicken is golden brown and cooked through.
  • While the chicken is baking, make the sauce by combining mayonnaise, sweet chili sauce, sriracha, and honey in a bowl. Whisk until smooth. Adjust the spice levels with extra sriracha if necessary. The balance of sweetness and spiciness should be just right to contrast the savory, crispy chicken.
  • Remove the chicken from the oven and let it cool slightly. Using a brush or by gently tossing the chicken, coat each piece with the sauce generously. Make sure it is thoroughly covered for that authentic Bang Bang flavor.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken on a wire rack and warm up in a preheated oven at 375°F (190°C) for about 10-12 minutes until crispy. Avoid using the microwave as it may result in soggy chicken.
