Steps
Place the diced onion and sliced mushrooms into the bottom of the crockpot.
In a skillet, sear the beef over medium-high heat until browned on all sides. Transfer to the crockpot.
In a mixing bowl, whisk together the beef broth, Worcestershire sauce, and sour cream. Pour over the beef and vegetables.
Season everything with salt and pepper. Cover and cook on low for 7–8 hours or on high for 3–4 hours until the beef is tender.
Serve hot over noodles or rice, garnished with fresh parsley.
