beef chuck roast
dried guajillo chiles
dried ancho chiles

Steps
Soak the dried guajillo and ancho chiles in hot water for 20 minutes. Drain, reserving some liquid.
Blend chiles with remaining ingredients, excluding the beef and broth, until smooth.
Sear beef chunks in a skillet on all sides, then transfer to crockpot.
Pour chile sauce over beef in crockpot, adding broth, bay leaves, and seasoning. Cook low: 8-10 hours or high: 4-6 hours.
Remove beef to shred and return to crockpot. Serve with lime, cilantro, and onions.
Notes
For spicier birria, add more of your preferred chili or chili powder to the blend. Store leftovers in airtight containers.
