Steps

  • Brown the ground beef in a large skillet, drain the fat, and transfer the beef to the crockpot.
  • Sauté the onion, celery, and carrots with minced garlic in the same skillet, then transfer to the crockpot.
  • Add diced potatoes, beef broth, salt, and black pepper into the crockpot and stir.
  • Mix heavy cream and flour into a bowl, then add with cheddar cheese to the crockpot and stir until melted.
  • Stir in the unsalted butter, adjust seasoning, mash some potatoes for a thicker soup if desired, and serve garnished with parsley.

Notes

Store leftover soup in the refrigerator for up to 3 days or freeze without potatoes for make-ahead convenience.
