  • Gather all ingredients and prepare them: diced onions, cubed potatoes, and minced garlic ready to go.
  • Brown the ground beef in a large skillet, breaking into smaller pieces. Drain fat and transfer to the crockpot.
  • In the same skillet, sauté diced onions and garlic until onions turn translucent.
  • Combine browned beef, sautéed onions and garlic, chicken broth, tomatoes, and potatoes in the crockpot. Stir to mix well.
  • Cook on low heat for 6-8 hours until potatoes are tender. Stir in shredded cheese and cream, and cook for another 30 minutes.
  • Season with salt and pepper to taste. Serve hot with optional garnishes like bacon and pickles.

Notes

Transfer leftover soup to an airtight container. Refrigerate for up to 4 days or freeze for up to 3 months for long-term storage.
