Steps

  • In a skillet, sauté onions and garlic in olive oil until onions are translucent.
  • Add ground beef and cook until browned. Drain excess fat.
  • Transfer beef mixture, potatoes, carrot, and chicken broth into the crockpot.
  • Cook on low for 6-8 hours or on high for 3-4 hours.
  • Stir in cheese, cream cheese, and milk. Cook until cheese is melted.
  • Season with salt and pepper to taste and serve with optional garnishes.

To store, let soup cool before refrigerating for up to 3 days or freezing for 2 months.
