Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, cooking until onions are translucent.
Add ground beef, break apart using a spoon, and cook until fully browned with no pink bits remaining.
Stir in sliced mushrooms and cook until they soften and release moisture.
Mix in flour and blend well. Gradually add beef broth, continuing to stir until the sauce thickens.
Reduce heat to low, then add sour cream; season with salt and pepper.

Notes
