Steps
Preheat your oven to 375°F (190°C) and heat the skillet over medium-high heat.
Cook ground beef in the skillet until browned, then drain excess fat.
Add chopped onion to the beef, cooking until soft. Stir in garlic powder and cumin.
Combine black beans and green chilies with the beef mixture, seasoning with salt and pepper.
Pour 1 cup of enchilada sauce into the meat mixture, then remove from heat.
Layer 5 corn tortillas at the base of your baking dish, followed by half of the beef mixture and cheese.
Repeat the layering process with remaining ingredients, topping with enchilada sauce.
Cover with foil and bake for 20 minutes. Remove foil for final 10 minutes to melt cheese.
Let cool, garnish with cilantro, and serve warm.
Notes
Store leftover casserole in an airtight container for up to 3 days in the fridge, or freeze pieces up to a month.
