  • medium onion
  • black beans
  • green chilies
  • garlic powder

Steps

  • Preheat your oven to 375°F (190°C) and heat the skillet over medium-high heat.
  • Cook ground beef in the skillet until browned, then drain excess fat.
  • Add chopped onion to the beef, cooking until soft. Stir in garlic powder and cumin.
  • Combine black beans and green chilies with the beef mixture, seasoning with salt and pepper.
  • Pour 1 cup of enchilada sauce into the meat mixture, then remove from heat.
  • Layer 5 corn tortillas at the base of your baking dish, followed by half of the beef mixture and cheese.
  • Repeat the layering process with remaining ingredients, topping with enchilada sauce.
  • Cover with foil and bake for 20 minutes. Remove foil for final 10 minutes to melt cheese.
  • Let cool, garnish with cilantro, and serve warm.

Notes

Store leftover casserole in an airtight container for up to 3 days in the fridge, or freeze pieces up to a month.
