  • In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper to create the marinade. Place the chicken breasts in the bowl and ensure they are thoroughly coated. Let them marinate for at least 30 minutes or overnight for maximum flavor infusion.
  • Heat a frying pan over medium-high heat. Add the marinated chicken breasts and cook until golden brown on each side and cooked through, about 6-7 minutes per side. Remove from heat and let the chicken rest before slicing it thinly.
  • Rinse the quinoa under cold water using a fine mesh sieve. Add to a saucepan with 2 cups of water, and bring to a boil. Once boiling, reduce heat to a simmer, cover, and cook for about 15 minutes until water is absorbed. Fluff with a fork and set aside.
  • In each bowl, layer quinoa, followed by sliced chicken, cucumber, cherry tomatoes, olives, and red onion. Add crumbled feta cheese on top and a dollop of tzatziki sauce. Sprinkle with fresh dill and garnish with a wedge of lemon.

Notes

These bowls can be prepped ahead and stored in the fridge in airtight containers for up to four days. Add fresh toppings when ready to serve for the best taste.
