Instructions
Steps
Cook the ground beef by heating it in a skillet over medium heat until browned; drain excess fat.
Add chopped onion and minced garlic to the skillet; cook until onion is translucent.
Stir in ground cumin and chili powder, and season with salt and pepper.
Warm enchilada sauce in a small saucepan over low heat.
Preheat oven to 350°F (175°C) and pour a little enchilada sauce into the bottom of an oven-proof baking dish.
Fill each tortilla with a scoop of beef mixture and sprinkle with cheese; roll tightly and place seam-side down in the dish.
Pour remaining enchilada sauce over the tortillas and sprinkle with the remaining cheese.
Cover with aluminum foil and bake for 20 minutes, then remove foil and bake for another 10 minutes or until cheese is golden brown.
Let rest for a few minutes before serving with optional toppings like sour cream or cilantro.
