  • ground beef
  • small onion
  • garlic
  • ground cumin
  • chili powder
  • enchilada sauce
  • corn tortillas
  • shredded cheese
  • salt and pepper

Steps

  • Cook the ground beef by heating it in a skillet over medium heat until browned; drain excess fat.
  • Add chopped onion and minced garlic to the skillet; cook until onion is translucent.
  • Stir in ground cumin and chili powder, and season with salt and pepper.
  • Warm enchilada sauce in a small saucepan over low heat.
  • Preheat oven to 350°F (175°C) and pour a little enchilada sauce into the bottom of an oven-proof baking dish.
  • Fill each tortilla with a scoop of beef mixture and sprinkle with cheese; roll tightly and place seam-side down in the dish.
  • Pour remaining enchilada sauce over the tortillas and sprinkle with the remaining cheese.
  • Cover with aluminum foil and bake for 20 minutes, then remove foil and bake for another 10 minutes or until cheese is golden brown.
  • Let rest for a few minutes before serving with optional toppings like sour cream or cilantro.

Refrigerate leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
