Steps
Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until the onion becomes translucent, about 5-7 minutes.
Add the beef strips to the skillet with the vegetables. Season with salt and pepper. Cook until browned, about 4-5 minutes.
Add the mushrooms and cook until they are soft, approximately 5 minutes.
Sprinkle the flour over the mixture and stir. Gradually add the beef broth, stirring until it thickens.
Stir in the sour cream and Dijon mustard over low heat. Mix until all is well combined.
Remove from heat, garnish with parsley, and serve over pasta or rice.
Notes
Store leftovers in an airtight container and refrigerate for up to 3 days. Delicious when reheated slowly.
