  • button mushrooms
  • garlic
  • white wine
  • beef stock
  • Dijon mustard
  • sour cream
  • salt and pepper

  • Heat a large frying pan over medium-high heat and add 1 tablespoon of olive oil. Once hot, add the sliced beef and sear quickly, ensuring it's browned on all sides. Remove the beef and set aside.
  • In the same pan, add the remaining olive oil. Stir in the chopped onion and sauté until translucent. Add the sliced mushrooms and minced garlic, cooking until golden brown.
  • Pour in the white wine to deglaze the pan, scraping up any browned bits. Allow the wine to reduce by half.
  • Reduce the heat to low and add beef stock and Dijon mustard. Stir well and let simmer.
  • Stir in the sour cream and bring the seared beef back into the pan. Mix well and heat through without boiling.
  • Add salt and pepper to taste. Garnish with chopped parsley before serving.

Notes

Leftover stroganoff can be stored in the refrigerator for up to three days. Reheat gently to prevent the cream sauce from separating.
