  • 1 lb ground beef
  • 1 head cauliflower chopped into florets
  • 15 oz diced tomatoes with green chilies canned
  • 2 tsp taco seasoning
  • 1 tbsp olive oil
  • 1 cup shredded cheddar cheese
  • 1 avocado sliced
  • fresh cilantro chopped
  • 1 lime cut into wedges

Instructions
 

  • Preheat your oven to 400°F (200°C) and roast cauliflower florets with olive oil, salt, and pepper.
  • Cook ground beef in a skillet over medium heat until browned.
  • Add diced tomatoes with green chilies and taco seasoning to the beef. Simmer for 5-7 minutes.
  • Combine the roasted cauliflower and the beef mixture in a mixing bowl.
  • Serve the mixture topped with cheese, avocado, cilantro, and lime wedges.
