Instructions
Preheat your oven to 400°F (200°C) and roast cauliflower florets with olive oil, salt, and pepper.
Cook ground beef in a skillet over medium heat until browned.
Add diced tomatoes with green chilies and taco seasoning to the beef. Simmer for 5-7 minutes.
Combine the roasted cauliflower and the beef mixture in a mixing bowl.
