Steps
Heat olive oil in a skillet over medium heat until shimmering.
Add onions and green bell peppers, and cook until softened, stirring occasionally.
Push veggies to the side, add ground beef, and cook, breaking apart until browned. Season with salt and pepper.
Mix cooked beef with vegetables in the skillet and let it heat together.
Place provolone cheese on top of the mixture, cover, and let melt for a couple of minutes.
Fill hoagie rolls with the beef and cheese mixture. Serve hot.
Notes
Store leftovers in the fridge in an airtight container for up to 3 days. Reheat using a skillet with a dash of water to maintain moisture.
