Steps

  • Prepare the ingredients, chopping all vegetables and cutting beef into 1-inch pieces.
  • Brown the beef in olive oil over medium-high heat in batches, seasoning with salt and pepper.
  • Sauté onions, carrots, and celery in the same pot until soft; add garlic for an additional minute.
  • Return the beef to the pot, sprinkle flour over, and incorporate Guinness beer and broth.
  • Bring to a boil, then reduce heat to low and simmer for 2½ hours, stirring occasionally.
  • Remove bay leaves, adjust seasoning, and serve garnished with parsley.

Notes

Store leftovers in the fridge for up to 3 days, or freeze for 3 months. Reheat gently. Serve with crusty bread or rolls.
