Steps
Begin by heating the olive oil in a large skillet over medium-high heat. Add the beef cubes in batches to brown them evenly.
In the same skillet, lower the heat slightly and add the chopped onion and garlic.
Add the sliced mushrooms to the skillet and sauté until they release their moisture and start to brown slightly.
Pour the beef broth into the crockpot along with Worcestershire sauce, soy sauce, and thyme.
Cover the crockpot with its lid and set it on a low setting. Let the beef tips cook slowly for about 7-8 hours.
If you prefer a thicker gravy, mix 2 tablespoons of cornstarch with 2 tablespoons of water to make a slurry.
