Instructions
Steps
Prepare all ingredients: slice bell peppers, dice potatoes, chop onions, and mince garlic.
Sear beef cubes in olive oil on a hot skillet until brown, then transfer to a crockpot.
Sauté onions and garlic in the skillet until translucent before adding to crockpot.
Add vegetables, tomato paste, Worcestershire sauce, beef broth, thyme, rosemary, salt, and pepper to the crockpot
Cover and cook on the crockpot's low setting for 8 hours, or 4-5 hours on high.
Serve hot, garnished with fresh parsley if desired.
Notes
Leftover stew can be stored in a refrigerator for up to 3 days or frozen for longer durability. Reheat in a saucepan on low heat.
