Steps

  • Prepare all ingredients: slice bell peppers, dice potatoes, chop onions, and mince garlic.
  • Sear beef cubes in olive oil on a hot skillet until brown, then transfer to a crockpot.
  • Sauté onions and garlic in the skillet until translucent before adding to crockpot.
  • Add vegetables, tomato paste, Worcestershire sauce, beef broth, thyme, rosemary, salt, and pepper to the crockpot
  • Cover and cook on the crockpot's low setting for 8 hours, or 4-5 hours on high.
  • Serve hot, garnished with fresh parsley if desired.

Notes

Leftover stew can be stored in a refrigerator for up to 3 days or frozen for longer durability. Reheat in a saucepan on low heat.
