Steps

  • Season beef with salt and pepper, heat oil, and brown the beef in batches.
  • Sauté onion and celery until translucent, then add garlic until fragrant.
  • Return beef to pot, add tomato paste, broth, beer, Worcestershire sauce, and thyme. Stir until combined.
  • Add potatoes, carrots, and bay leaves. Simmer for 2-2.5 hours until beef is tender.
  • Remove bay leaves, adjust seasoning, and garnish with parsley before serving.
