Steps
Begin by patting the beef cubes dry with paper towels. Toss with flour until lightly coated.
Heat olive oil in a large skillet. Brown the beef cubes on all sides and transfer to a slow cooker.
Add onions and garlic to the skillet, sauté until translucent, then add to the slow cooker.
Add carrots, potatoes, broth, wine, tomato paste, thyme, salt, pepper, and bay leaves. Stir to combine.
Cover and set the slow cooker on low for 8-10 hours or high for 4-6 hours.
Remove bay leaves before serving. Adjust seasonings as needed. Enjoy!
