  • Begin by patting the beef cubes dry with paper towels. Toss with flour until lightly coated.
  • Heat olive oil in a large skillet. Brown the beef cubes on all sides and transfer to a slow cooker.
  • Add onions and garlic to the skillet, sauté until translucent, then add to the slow cooker.
  • Add carrots, potatoes, broth, wine, tomato paste, thyme, salt, pepper, and bay leaves. Stir to combine.
  • Cover and set the slow cooker on low for 8-10 hours or high for 4-6 hours.
  • Remove bay leaves before serving. Adjust seasonings as needed. Enjoy!
