  • ground beef
  • medium onion
  • frozen mixed vegetables
  • cream of mushroom soup
  • medium potatoes
  • shredded cheddar cheese
  • salt and pepper
  • olive oil

Steps

  • In a large skillet, add olive oil, cook onions and ground beef until the beef is browned and onions are translucent. Drain excess fat and set aside.
  • Layer the sliced potatoes at the bottom of a casserole dish, add the beef, then the frozen vegetables on top.
  • Spread the cream of mushroom soup over the top and season with salt and pepper.
  • Cover with foil and bake in a preheated oven at 375°F (190°C) for 45 minutes.
  • Remove foil, sprinkle cheddar cheese on top, and bake for an additional 10-15 minutes until cheese is bubbly.

Notes

Store leftovers in an airtight container in the fridge for 3 days or freeze for 2 months. Reheat to serve.
