Steps
In a large skillet, add olive oil, cook onions and ground beef until the beef is browned and onions are translucent. Drain excess fat and set aside.
Layer the sliced potatoes at the bottom of a casserole dish, add the beef, then the frozen vegetables on top.
Spread the cream of mushroom soup over the top and season with salt and pepper.
Cover with foil and bake in a preheated oven at 375°F (190°C) for 45 minutes.
Remove foil, sprinkle cheddar cheese on top, and bake for an additional 10-15 minutes until cheese is bubbly.
Notes
Store leftovers in an airtight container in the fridge for 3 days or freeze for 2 months. Reheat to serve.
