Steps

  • Heat olive oil in a large pot over medium heat. Brown the beef cubes on all sides and remove them from the pot.
  • In the same pot, add onions and sauté until soft. Add garlic and cook for another minute.
  • Add tomato paste and cook briefly. Pour in beef broth and add thyme and rosemary.
  • Return beef to the pot and add carrots, potatoes, and peas. Simmer until beef is tender.
  • Thicken the stew with a flour mixture, stirring until desired consistency is reached.

Notes

Store leftovers in airtight containers in the fridge for up to four days, or freeze for up to three months.
