In a mixing bowl, combine honey, soy sauce, lemon juice, and minced garlic. Whisk together until they are well blended.
Add shrimp to the marinade, ensuring each piece is coated. Allow them to marinate for at least 15 minutes.
Heat a non-stick skillet over medium heat and add olive oil.
Use tongs to transfer shrimp from the marinade to the hot skillet. Cook for about 1-2 minutes on each side.
Pour remaining marinade into the skillet. Allow it to simmer for a couple of minutes, stirring occasionally.
