Gather all your ingredients on a clean work surface. Chop the green onions, slice the red bell pepper, and mince the garlic and ginger. Set aside the beef strips.
Boil water in a medium saucepan. Cook the rice noodles as per package instructions, usually 4-5 minutes. Drain and rinse under cold water.
Heat a large skillet or wok over medium-high heat adding sesame oil once hot. Add minced garlic and ginger, stirring continuously for 1 minute.
Lower heat to medium. Stir in soy sauce, oyster sauce, and honey. Let simmer for 2 minutes ensuring beef is coated.
Add cooked noodles and sliced red bell pepper to the skillet. Toss everything using a spoon until noodles are coated in the sauce. Top with green onions and sesame seeds.

Cool completely before freezing in airtight containers. To reheat, thaw in fridge overnight and heat in a skillet.
