Steps
Prepare the beef by slicing it thinly against the grain, seasoning with salt and pepper.
In a large pan over medium-high heat, sear the beef slices until browned on both sides. Remove and set aside.
Add onions, garlic, and mushrooms to the same pan. Sauté until mushrooms release their moisture and onions become translucent.
Add beef broth and let simmer. Stir in sour cream, mustard, and Worcestershire until sauce is smooth.
Return beef to the pan. Simmer until beef is cooked through and flavors are combined, around 5 minutes.
Garnish with fresh parsley and serve over preferred dish such as noodles or rice.
Notes
Store in an airtight container in the fridge for up to 3 days or freeze for 2 months. Reheat gently to avoid separating the sauce.
