Instructions
Preheat oven to 400°F (200°C).
In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
Place chicken thighs in a baking dish and pour the marinade over them. Rub to coat evenly.
Top with lemon slices and bake uncovered for 35 minutes or until internal temperature reaches 165°F (75°C).
Remove from oven and let rest for 5 minutes. Garnish with chopped parsley before serving.
Notes
This lemony chicken bake is great with steamed broccoli or cauliflower rice. Store leftovers in the fridge for up to 3 days.
