Ingredients

  • 4 pieces bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp lemon zest
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper
  • 1 lemon thinly sliced for garnish
  • 1 tbsp fresh parsley chopped, for garnish

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
  • Place chicken thighs in a baking dish and pour the marinade over them. Rub to coat evenly.
  • Top with lemon slices and bake uncovered for 35 minutes or until internal temperature reaches 165°F (75°C).
  • Remove from oven and let rest for 5 minutes. Garnish with chopped parsley before serving.

Notes

This lemony chicken bake is great with steamed broccoli or cauliflower rice. Store leftovers in the fridge for up to 3 days.
