Instructions
Prepare your ingredients by chopping onions, slicing bell peppers, and slicing mushrooms.
Heat olive oil in a large saucepan over medium heat. Add the chicken thighs and sear until golden brown on both sides.
Add onions and garlic to the pan and cook until the onions caramelize and garlic is aromatic.
Pour in the chicken broth, scraping the bottom of the pan, and add Italian seasoning, salt, and pepper. Simmer for 10 minutes.
Add sliced bell peppers and mushrooms, cover the pan, and cook for approximately 10 minutes until they soften.
Add the spinach and stir until wilted. Adjust with salt and pepper as needed.
Notes
Store leftovers in an airtight container in the fridge for up to three days or freeze for up to 2 months. Reheat thoroughly before serving.
