Ingredients
  

Main Ingredients

  • 2 boneless chicken breasts
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup cream cheese softened
  • 1/2 cup chicken broth low sodium
  • 1 can artichoke hearts drained and chopped
  • 2 cups fresh spinach roughly chopped
  • 1/4 cup parmesan cheese grated
  • salt and pepper to taste

Instructions
 

  • Season chicken with salt, pepper, and paprika. Heat olive oil in a skillet and sear chicken on both sides until golden.
  • In the same skillet, add garlic and let it become fragrant. Add cream cheese and stir until melted. Add chicken broth and parmesan, stirring until smooth.
  • Add spinach and artichoke hearts to the skillet, stirring until the spinach wilts.
  • Nestle chicken into the skillet, cover, and simmer until cooked through. Garnish with parmesan before serving.

Notes

For extra flavor, marinate chicken beforehand or add a squeeze of lemon just before serving.
