Ingredients

  • 1 lb ground beef
  • 6 large eggs
  • 1 cup shredded cheese cheddar or your preference
  • 1 medium onion diced
  • 1 bell pepper diced
  • 1 cup baby spinach
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • salt and pepper to taste

Instructions
 

  • Heat a large skillet over medium heat and add the ground beef. Cook until browned, breaking it apart with a spoon. Drain the excess fat and set it aside.
  • In the same skillet, add diced onion and bell pepper. Sauté for about 5 minutes or until softened. Then, add the baby spinach, stirring until wilted.
  • In a mixing bowl, crack the eggs and add garlic powder, smoked paprika, salt, and pepper. Whisk until well combined.
  • Preheat your oven to 375°F (190°C). In a baking dish, layer the cooked ground beef, followed by the sautéed vegetables. Pour the egg mixture over the top and finish with a generous sprinkling of shredded cheese.
  • Place the baking dish in the oven and bake for 25–30 minutes, or until the eggs are set and the cheese is golden and bubbly.

Notes

Store leftover casserole in an airtight container in the refrigerator for up to 4 days. Freeze for up to 3 months, thaw before reheating at 375°F (190°C) until heated through.
